Desert Recipies:

Orange biscuits

You will need:
2/3 cup shortening, 3/4 cup sugar, 1 egg, 1/2 cup orange juice (fresh squeezed), 2 tablespoon grated orange rind, 2 cups flour, 1/2 teaspoon baking powder, 1/2 teaspon baking soda, 1/2 teaspoon salt.

Mix shortening, sugar, and egg in a large bowl.
Stir in orange juice and grated orange rind
Mix (in seperate bowl) flour, baking powder, baking soda and salt
Blend the dry ingredients into the wet ingredients bowl and mix very well

It is a good idea to chill the dough for 2-3 hours

Drop rounded teaspoonfuls 2" apart on ungreased sheet. Cookies spread out.

Bake at 400F for 8-10 minutes
Be careful, cookies can burn fast on the bottom first so it's hard to notice.
Let cool before frosting

Icing:Orange Butter Icing
2 1/2 tablespoons soft buter (not melted!), 1 1/2 cups powdered sugar
1 1/2 table spoons fresh orange juice, 2 teaspoons grated orange rind

Mix all together in a bowl, add more sugar to be thicker and more juice to be thinner.

Cream Wafers

You will need:
1 cup butter, 1/3 cup whipping cream, 2 cups flour
Extra sugar and *flour set aside, wax paper

Mix butter, cream and flour together.
Chill for an hour

Cut into small circles or shapes.
You don't need a special cookie cutter, I've used an upside down shot glass before to make little cirles

Have sheet of wax paper with sugar on it.
Coat the circles with sugar by placing them on the wax paper and pressing lightly. Coat with both sides.

*The extra flour is for if you are cutting the cookies on the cutting board and they stick, you can sprinkle it with flour.

After placing cookies on baking sheet, you can poke them with a fork for decoration.

375F for 7-9 minutes. The cookies will puff slightly.
Use an ungreased baking sheet.

Put 2 cookies together with creamy butter filling.
Stick together like a sandwich cookie.

Icing: Creamy Butter Filling
1/4 cup soft butter (not melted!), 3/4 cup powdered sugar, 1 teaspoon vanilla extract

Mix all together.
Tint pink or green
You can use different extracts/flavours, I've had good success with raspberry and lemon (not at the same time).

Painted Cookies

You will need:
3/4 cup butter, 1 cup sugar, 2 eggs, vanilla,
2 1/2 cups flour, 1tsp baking powder, 1tsp salt

Mix softened butter and sugar together.
Mix in eggs and a dash of vanilla.
Sift in flour, baking powder, and salt.

Chill in the fridge for 30 minutes to an hour.

Roll out on a floured board and use cookie cutters.

375F for 8-10 minutes. Use a greased baking sheet.

"Paint":
an egg yolk, a half teaspoon of water, and 1 drop of food colouring mixed.

Don't worry, your cookies will not taste like eggs. The yolk will make the paint shiny and also allow sprinkles to stick easier.
Make sure you paint the cookies before you bake them! Raw egg isn't tasty.
